Non-alcoholic Christmas drinks

1. WARM HOLIDAY DRINK (SCANDANAVIAN)

1 piece of cheesecloth
3 whole cardamoms
8 whole cloves
1 cinnamon stick
1 small orange rind (the peel)
3 cups water
1/2 cup golden raisins
1/2 cup blanched almonds
7 cups dark red grape juice

Tie cardamoms, cloves, cinnamon stick and orange rind in a cheesecloth. Place in water and
bring to boil. Simmer, covered, for 10 minutes. Add raisins and almonds and simmer for 10 minutes more.

Stir in grape juice and bring to a quick boil. Remove from heat immediately. Cover and store
in a cool place overnight. At serving time, heat and remove spice bag.  Provide honey to taste and serve warm. Makes 12 servings.

2. CAFFEINATED CHRISTMAS PUNCH (as seen in the photo above)

1 piece of cheesecloth
6 Earl Grey tea bags
4 cups water
9 whole cloves
1 ½ cinnamon stick, broken into 3 inch pieces
4 cups cranberry juice cocktail (1 quart)
1 cup brown sugar
3 cups dark red grape juice OR apple juices

Bring the water to a boil. Remove from heat and pour over the tea bags. Stir and let steep for 5
minutes. Combine the tea, cranberry juice and sugar in a crock pot or a covered pot. Tie the cloves and cinnamon in a cheesecloth and place in the crock pot. Heat on medium-high for 1 hour.

Stir in grape or apple juice and heat on low for 6 hours. If you are using apple juice, feel free to add whole or sliced apples to the punch while on slow boil.  Before serving, remove the spice bag and serve. Garnish dish with cut ivy or evergreen clippings for added style.  Makes 12 servings

3. FIZZY RASPBERRY PUNCH

4 x 10 ounce packages frozen raspberries, thawed and undrained
1 x 6 ounce can frozen lemonade concentrate, thawed
1 X 2 liter bottle ginger ale, chilled

In a sauce pan, cook the raspberries over medium heat for 10 minutes, stirring frequently. Let the raspberries cool slightly. Push the raspberries through a strainer with a large spoon to remove the seeds. Chill the raspberry juice for at least 2 hours. Mix raspberry juice and lemonade concentrate in a large pitcher or punch bowl. When ready to serve, stir in ginger ale. Serve immediately over ice.  Makes 12 servings

4. EXTRA PLUS…ANGELS DELIGHT

1/4 cup whipped cream or heavy cream
1 cup milk
7 scoops ice cream
1/2 cup chopped pecans
1/4 cup chocolate syrup (real is best)
1 banana

Place all ingredients in a blender. Add whipped cream and crushed nuts on top of blended mix before serving.  Makes 4 servings
